Menu Plan Monday

Here's the plan (I plan my weeks from Saturday through Friday):

Saturday
Breakfast: Banana muffins and canteloupe
Lunch: Sandwiches, veggies and strawberries
Dinner: We had a very simple dinner--toast and fruit! Keith was out of town and I was tired.

Sunday
Breakfast: Banana muffins and canteloupe again. Love the canteloupe this time of year!
Lunch: Sandwiches, veggies and fruit
Dinner: Taco birthday dinner for my sweet sister-in-law (no cooking for me, yay!)

Monday
Breakfast: Green smoothies and oatmeal
Lunch: Leftover tacos
Dinner: Spaghetti with whole wheat noodles and a big green salad--I'm making this tripled so that I can freeze a couple of batches for when baby comes. I'm also going to do this in the Crock-pot this time--oh, Crock-pot, how I love thee.

Tuesday
Breakfast: Pancakes and grapes
Lunch: Leftover spaghetti and veggies
Dinner: Crock-pot Chow Mein made with pork loin

Wednesday
Breakfast: Oatmeal and fruit
Lunch: Leftover Chow Mein
Dinner: Family night supper at church (gotta love these nights when I don't have to cook!)

Thursday
Breakfast: Green smoothies and toast
Lunch: Sandwiches, veggies and fruit
Dinner: Falafel--oh, so yummy! I'll be making extras of this for the babymoon, too, since it freezes so well. If you've never had this, it's definitely worth a try! One of my favorite foods EVAH! I'll be making this with homemade pitas and tahini sauce.

Friday
Breakfast: Eggs and fruit
Lunch: Leftover falafel
Dinner: Hamburgers on homemade whole wheat buns--for the buns, I use this recipe and just do the dough cycle on my bread machine. Then I roll it out to about 3/4" thick and cut it into circles with a cookie cutter or glass. Let them rise a bit and then bake at 350 for about 15 minutes.

Snacks: Applesauce, fruit, raisins, veggies, popcorn

Here's the plan (I plan my weeks from Saturday through Friday):

Saturday
Breakfast: Banana Muffins and Pineapple
Lunch: Leftovers
Dinner: Leftovers (again!)

Sunday
Breakfast: Banana bread and OJ
Lunch: Invited to eat out with friends! (Yay!)
Dinner: Whatever you can find, honey. :)

Monday
Breakfast: Oatmeal and green smoothies
Lunch: Homemade bread, veggies and apples
Dinner: CrockPot Chicken and Dumplings

Tuesday
Breakfast: Eggs, toast and fruit
Lunch: Leftovers
Dinner: Garlicky White Bean Soup with Dark Greens with carrots and biscuits

Wednesday
Breakfast: Toast and fruit
Lunch: Leftovers
Dinner: Scrambled eggs with cheese, homemade bread, and raw veggies

Thursday
Breakfast: Oatmeal and green smoothies
Lunch: Leftovers or sandwiches and veggies
Dinner: CrockPot Applesauce Chicken with green beans and rice

Friday
Breakfast: Pancakes and fruit
Lunch: Leftovers
Dinner: Hamburgers and salad

Snacks: Applesauce, raisins, carrot sticks, popcorn.

Hey all! Here's the menu plan for the week! By the way, don't forget to enter the great apron giveaway from Marie-Madeline Studio!

I plan my weeks from Saturday through Friday, so don't let that throw ya, OK?

Saturday
Breakfast: Banana muffins and fruit
Lunch: Homemade bread with honey and raw veggies
Dinner: Pizza and raw veggies

Sunday
Breakfast: At church this Sunday
Lunch: Out to eat (a rare treat!)
Dinner: Leftovers

Monday
Breakfast: Oatmeal and fruit
Lunch: Sandwiches and veggies
Dinner: CrockPot Hamburger Stroganoff and green beans

Tuesday
Breakfast: Toast and green smoothies
Lunch: Leftovers
Dinner: CrockPot pork chops with potatoes and carrots (This is so easy. Mix up a little flour and salt and pepper. Toss your veggies and pork chops in the flour mixture. Put it in the CrockPot with the veggies on the bottom. Pour some chicken broth over top--about two cups or so. Turn it on low and about 6-8 hours later you've got some yummy chops with veggies and gravy!)

Wednesday
Breakfast: Eggs in a basket and fruit
Lunch: Leftovers
Dinner: Spaghetti and salad

Thursday
Breakfast: Oatmeal and fruit
Lunch: Leftovers
Dinner: CrockPot Chicken and Brown Rice Casserole with broccoli

Friday
Breakfast: Toast and green smoothies
Lunch: Leftovers
Dinner: Loaded potato wedges and salad (Another easy, yummy make. Cut potatoes into wedges, toss in olive oil, garlic powder and salt. Bake at 450 for 30 minutes or so (you'll have to watch! The length of time required will depend on how fat you make your wedges). For the last little bit, top the potatoes with shredded cheese, crumbled bacon, or whatever sounds good to you! You can also add green onions, sour cream or ketchup when they come out of the oven.)

Snacks: applesauce, popcorn, raw veggies, raisins.

Menu Plan Monday

My first online menu plan! Well, yay! Menu planning is a habit that I've finally adopted regularly, and it has made life (and the budget) so much better. We keep things pretty simple around here, and we also keep things pretty cheap. Rice and beans, beans and rice as Dave Ramsey would say!

Here's the plan for the week:

Monday
Breakfast: Oatmeal and applesauce
Lunch: Homemade sunbutter and honey sandwiches on homemade bread with baby carrots and cherry tomatoes.
Dinner: Salsa Chicken and Black Bean Soup (this one's a Crock Pot recipe and it is SOOO good!)

Tuesday
Breakfast: Whole wheat pancakes and green smoothies
Lunch: Soup leftovers from night before
Dinner: Crunchy Garlic Chicken with sweet potatoes and spinach

Wednesday
Breakfast: Oatmeal and fruit
Lunch: Chicken leftovers from night before
Dinner: Sloppy Joe's on whole wheat rolls with baby carrots and green pepper strips (I modify this recipe a bit using homemade ketchup if I have some, and sucanat instead of brown sugar.)

Thursday
Breakfast: Eggs, whole wheat toast, oranges
Lunch: Leftover Sloppy Joe's
Dinner: Egg casserole and grapes (If I have the extra money, I try to use nitrate free sausage. There are tons of recipes for breakfast casseroles on AllRecipes that can be adapted healthfully.)

Friday
Breakfast: Whole wheat pancakes and green smoothies
Lunch: Sandwiches and veggies
Dinner: Loaded potato skins and tossed green salad (These are basically potatoes cut in wedges topped with bacon, sour cream, cheddar cheese, green onions, etc. Whatever sounds good to you! Again, if I have the extra money, I try to purchase nitrate free bacon.)

Saturday
Breakfast: Banana muffins and fruit
Lunch: Leftovers or sandwiches and veggies
Dinner: Bean burritos (Refried Beans Without the Refry, on corn tortillas with cheese, tomatoes, lettuce, salsa, etc. This is another great Crock Pot recipe.)

Sunday
Breakfast: Banana muffins and fruit
Lunch and Dinner: grab whatcha can, cuz Mama's resting up!
